In Symphonic Chocolates, music guides the audience as they eat pieces of chocolate of different varieties.

Composer, Maxime Goulet, created Symphonic Chocolates, a multi-sensory experience that brings music and chocolate together. He says: “What I found is that when you eat, almost all the senses are involved.

Goulet’s official website describes the four segments of the orchestra as followed:

  • I – Caramel Chocolate: A long lyrical melody supported by a rich and enveloping sonority.
  • II – Dark Chocolate: An intense habanera of desire and seduction, spiced up with a dissonant bitterness.
  • III – Mint Chocolate: A delicate freshness with icy cold sonorities.
  • IV – Coffee-infused Chocolate: An espresso tempo with a Brazilian flavor

For Goulet, the interaction between sound and taste influences perception. His work is now supported by a study conducted by Charles Spence, published in Appetite. Spence analyzed the response of 116 participants eating two identical chocolates while listening to two very different piece of music. The experiment verified Goulet’s statement in that the music changed the perception of the chocolate’s consistency and flavor.
